Limburgs Zoervleis

This is a very typical recipe from the most southern province of our country, Limburg. Literally it’s called "sour meat". And that pretty much says it all. 
You marinate 800 grams of beef for 24 hours in mixture of 500 ml water and 500 ml vinegar. That’s right, half a liter of vinegar. With some bayleaf, cloves and pepper.
After 24 hours you panfry the drained beef, add back the marinate including all the vinegar. Then add 500 grams of onions, which you caramelized in another pan. Simmer this for 2 hours, then add "ontbijtkoek" (a dutch cake resembling honey cake) and "appelstroop" (kind of treacle made from apples) to thicken and sweeten the stew. Pepper & salt to the taste.
Serve with fries, mayonaise and apple compote.
My partner loved it. I thought it was all right, but I would probably have preferred it with mash potatoes instead.
